Baba Ghanoush - Smoked Eggplant Paste

Recipe
Smoking:

- Wash the eggplants, then prick them several times with a knife.
- Place the eggplants along with the garlic in a preheated smoker set to 120 °C (248 °F).
- Smoke for 20 minutes, using beech wood chips.
- The eggplants will be ready when they become soft; the garlic can be removed earlier.
Preparing the paste:

- Cut the eggplants in half lengthwise and scoop out the flesh.
- In a blender, mix the eggplant flesh with tahini, lemon juice, olive oil, salt, and pepper until smooth.
- Finally, add some chopped parsley, using it to garnish the top of the paste.
Serve the paste with pita bread and olives for added flavor. Enjoy your meal!

- 2 eggplants
- 4 teaspoons of tahini (sesame paste)
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- 1-2 cloves of garlic
- 2 tablespoons of olives, chopped or sliced, pitted
- ½ teaspoon of smoked chili salt or kitchen salt
- ¼ teaspoon of pepper
- 10g of parsley (optional)
